Early Harvest, Green Fruit

The fruit is picked largely green, at the exact moment when polyphenol content and aromatic intensity reach their peak. Fewer kilograms of oil per tree — far more character per drop.

The olives never touch the ground, are never heaped or bagged, and reach the mill within two hours of picking. That immediacy is what keeps acidity at 0.11% and ethyl esters below 10 mg/kg.

Pure Cold Extraction ≤ 27 °C

No heat, no chemical additives, no solvents — only mechanical crushing and centrifugal force (Pieralisi line, imported from Italy). Low temperature preserves the polyphenols and fresh aromas.
